Foods and Nutrition Encyclopedia (2 vols.)
Provides detailed information about nutritional compositions of food, identification and treatment of nutrient deficiencies. Extensive tables and charts organize vast amounts of diet-related information.

Over 2,000 recipes for salads, beef, pork, lamb, poultry, seafood, desserts, and more. All recipes feature cooking times, number of portions, cooking instructions, service and portion ideas, and cost-cutting hints. Also instructs the user on proper procedures for purchasing foodstuffs and managing employees.
